I love this recipe! We made it for a family dinner recently…and I may have made an extra one that we ate the night before…I can neither confirm nor deny 😉

Salted Caramel Cheesecake
Ingredients:
1 packet of plain biscuits 1 can condensed milk 2 cups thickened cream
125g butter juice of 1 lemon 1½ sachets gelatine
2 tbsp golden syrup 1 packet cream cheese ¼ tsp Norfolk Salt
Instructions
- Using a processor, crush biscuits (or use a rolling pin to crush the biscuits in a plastic bag)
- Melt butter gently
- Mix well and press into a pie dish or square dish of your choice
- Place in the fridge to chill
- Whip the cream until thick and stiff
- In a small pot, melt the condensed milk and golden syrup over a low heat, until mid-caramel in colour
- Add Norfolk Salt to caramel mixture
- In a mixer, whizz cream cheese until smooth
- Add cream, gelatine dissolved in 2 tablespoons of hot water
- · Add caramel mixture to the rest of the ingredients
- · Pour into prepared base and refrigerate 2-3 hours before serving
